With their elegant long necks and russeted green skin, Conference is one of the most recognisable of all British pear varieties. Their flesh is buttery soft and juicy, with an intensely sweet flavour – best enjoyed fresh, straight from the bowl, although they will also hold their shape quite well when cooked.
